Mutton Biryani

Ingredients

  • Basmati Rice – ½ Kg
  • Mutton – ½ Kg
  • Lemon – 2 Nos
  • Curd – 2 Tb Spoons
  • Salt Tasty
  • Coriander leaves – 2 Bunches
  • Mint Leaves – 2 Bunches
  • Onion – 1 No
  • Green Chillies – 5 Nos
  • Bay Leaves – 3 Nos
  • Cashew Nuts – 3 Nos
  • Star Anise – 2 nos
  • Wailongs (Marathi Mogga) – 2 Nos
  • Cloves – 8 Nos
  • Cinnamon Sticks – 3 Nos
  • Poppy Seeds – 1 T Spoon
  • Green Cardamoms – 3 Nos
  • Coriander Seeds – 1 Tb Spoon
  • Ghee – 2 Tb Spoons
  • Ginger – Small Size
  • Garlic – 1 No
  • Raw Coconut – 1 No or coconut milk – 1 Cup
  • Red Food colour – Pinch

Method

Step 1

Wash basmati rice twice and soak for 1 Hour Turn On the stove, place the non-stick kadai, after heating add Coriander seeds, cashew nuts, poppy seeds, garlic, ginger and fry for 3 to 5 minutes after that add ginger, green chillies then fry for 2 minutes. Then take mixer jar add all fried ingredients and make fine paste by adding little water.

Step 2

Take bowl add mutton pieces, add curd, squeeze lemon, add the masala paste mix well and marinate for minimum 15 minutes. Place the non-stick kadai on the stove, add ghee, marinated mutton and fry for 20 minutes by closing the lid. (Also you can use cooker for cooking the mutton for 2 whistles) then keep the mutton aside.

Step 3

For Rice measurement is for 2 Cups of Rice add 2 cups of coconut milk & 2 cups of glass water. Turn on the gas stove and place the deep large kadai, add ghee, add all remaining masala ingredients including chopped (Long slices of onions) fry for 2 minutes, add ginger garlic paste, add coriander & mint leaves, add coconut milk, water (as per the measurement) boil until rolling boil, add soaked rice and mix well then cook for 10 minutes on medium flame by closing the lid. After 10 minutes of cooking rice place the mutton pieces which we have already cooked before, also add the min, coriander leaves add little ghee, milk of 1 Tb Spoon and red colour pinch.

Step 4

Now place the tawa on the stove and on the top of the tawa place the biryani bowl. This method is also called Dum biryani method after 10 minutes your tasty Mutton Dum biryani is ready to serve. hot
