Malabar Ghee Rice: How to Make Ghee Rice Recipe

Ingredients

  • Basmati Rice - 1 cup
  • Cashew nuts - 20
  • Raisins and almonds - 10 to 20
  • Ginger - 1 inch
  • garlic pods - 4
  • Cinnamon stick - 2
  • Cloves - 5
  • Mace - 2 small
  • Green cardamom - 3
  • Nut meg -1/4 "
  • Black cardamom -1
  • Bay leaf -1
  • Green chilli - 3
  • Salt - tasty
  • Sugar - 1 teaspoon
  • Ghee - 200 grams

Method

Step 1

Soak Basmati rice for 30 minutes, drain water and keep aside for 10 minutes

Step 2

Heat kadai and melt ghee, Fry onion until brown take out and Keep a side. in the same Pan add and Fry cashew nuts and almonds for 2 minutes, add raisins and take out Add masala ingredients and fry for 1 minute, Add fried onion

Step 3

Grind ginger garlic and green cardamom make a power and keep aside, in the same pan add the greed chilli paste and fry for 3 minutes, after that add drained basmati rice then fry for 5 to 6 minutes

Step 4

take another kadai add water (double the quantity of the rice measurement) boil for 4 minutes, then add salt and sugar mix well, then add the boiled water for 5 minutes on high flame. after 5 minutes add the half of quantity of dry fruits & fried onions. now place the cotton towel on top of the rice . put the flame on low and wait until it completely done.

Step 5

after few minutes (2 to 3 minutes) add 1 t spoon of ghee and serve hot by garnishing with the remaining dry fruits .
