Kerala Special Avial (അവിയല്‍) Preparation in telugu [wpsr_plusone]

Avial is a dish that is common in Kerala as well as Tamil cuisine and Udupi cuisine. It is made like a thick mixture of vegetables and mainly with coconut, weathered with coconut oil and curry leaves. Avial is measured an essential part of the Sadya, the Keralite vegetarian meal.

In avail you can use all types of Vegetables mostly elephant yam, plantain ( అరటి), pumpkin (గుమ్మడికాయ), carrots (క్యారెట్లు), beans, Brinjal (వంగ) , cucumber (దోసకాయ), drum sticks (ములక్కాడలు), snake gourd (పొట్లకాయ) and avarai. Carrots, beans etc. are recent introduction, while the north Keralian Avial includes bitter gourd (కాకరకాయ) also. Some people prefer to skip curd or substitute it with raw mango or tamarind pulp. This dish can be made into a gravy or be made into a semi-solid side dish. It is generally eaten with Brown Rice rice.

Ingredients

  • Carrots - 1/4 Kg
  • Red Chilli Powder
  • Turmeric Powder
  • Beans
  • Brinjals
  • Plaintain
  • Bitter Gourd - Optional
  • Raw Banana - 1 No
  • Elephant Yam
  • Potatoes - 2 Nos
  • Salt - Tasty
  • Raw Mango (Optional)
  • Water
  • Grated Coconut - Mixture from One Coconut
  • Curry Leaves - 1 Bunch
  • Small Onions - 10 Nos
  • Curd - 1 Cup
  • Seasoning ingredients - 2 T Spoons
  • Cumin Seeds - 1 T Spoon
  • Green Chillies - 3 Nos

Method

Step 1

---------- Grinding the Coconut Paste-------- take a pan and heat add the seasoning and crackle then take Mixer Jar and add Grated coconut (Mixture), Curry Leaves and Small or Big Onions grind well and keep aside.

Step 2

Cut all the vegetables like a long piecesTake a Kadai and keep on the stove and add water and boil then add all vegetables and little amount of salt and turmeric powder. cook until the water evaporates 3/4th

Step 3

Now Add the Coconut Paste to the vegetables (Already cooked) then cook until it loses the raw flavour. it will only 2 to 3 Minutes

Step 4

after through cooking add the oil to the avial (coconut or normal oil) and mix well for few minutes

Step 5

Thats all your favorite Kerala Special recipe is ready to serve with the Brown Rice or Normal rice as you wish
