Amaranthus Mango Tomato Dal
- Toor Dal – 100 Grams (Soaked for minimum 10 minutes)
- Amaranthus (Thota Kura) – 150 Grams
- Raw Mango – 1 No (Grated)
- Tomato – 1 No (Chopped)
- Onion – 1 No (Medium Chopped)
- Green Chillies – 4 Nos (Sliced)
- Seasoning (Tempering) Ingredients – 1 T Spoon
- Ghee – 2 T Spoons
- Curry Leaves – 2 Bunches
- Garlic Pods – 3 Nos
- Dry Red Chillies – 2 Nos
- Cumin (Jeera) – 1 T Spoon
- Oil – 1 Tb Spoon
- Red Chilli Powder – 1 T Spoon
- Salt – Tasty
- Turmeric Powder – 1 Pinch
In a cooker add water double to the measurement of Toor Dal and place on a stove top and close the lid and cook for 3 whistles and then mash the dal and keep aside
In a non-stick kadai after heating add 2 T Spoons of ghee and melt after dissolving the ghee add the t 1 Tb Spoon of oil after heating add the seasoning wait for crackle then add the garlic pods, Jeera, red chillies, Curry leaves, saute for 2 minutes then add the onions and green chillies saute for 3 minutes by closing the lid of the non-stick kadai after that add tomato and saute for 2 minutes.
Now add the spinach/Amaranthus then fry for 3 to 5 minutes after that add the grated Mango and mix well and then finally add the cooked toor dal and water for gravy purpose, add salt, red chilli powder, and turmeric powder and then cook for 5 minutes. That’s it your tasty and delicious combinational dal is ready to serve hot with rice.
